1 punnet mushrooms
1/2 block of Tofu
1/2 jar Green Thai Curry Paste
1 can Coconut milk (reduced or regular)
1 Veg Stock
150 grams red lentils (about 1/2 cup)
1 courgette
Sugar snap peas
Head of brocolli

So pop 1 punnet of mushrooms, a half block of tofu, 1/3 of a jar of green curry paste, 1 can of reduced fat coconut, 1 veg stock .and around 150g…(a half a cup ) of lentils….bring to the boil for about 10 mins then allow to simmer…just so the lentils are cooked….then throw in the 1 chopped courgette….cook for 10 mins…then throw in the sugar snaps and a good big head of broccoli (obviously chopped up)..and that is it….so easy xx
